This March, our team had the delicious pleasure of attending the Bánh Mì Festival 2025 in the heart of Ho Chi Minh City – an annual celebration that honors the country’s most iconic street food. Let’s just say, it was love at first bite!
Celebrating Vietnam's Culinary Heritage
This year’s theme, “Giòn ngon bánh mì - đậm vị cà phê” (“Crispy and delicious bánh mì – Flavorful Coffee”) brought together over 150 booths from local artisans, street vendors, and top-tier bakeries across Vietnam. The festival wasn’t just simply about eating bánh mì, it was a journey digging into Vietnam’s rich history, regional cuisine variations, and cultural significance. As expected, we were amazed by the diversity of bánh mì on display. From classic cold cuts and pate to innovative fusion fillings, every stall has its own story. Some of the most outstanding versions of bánh mì that we got to admire include:
- Bánh mì thịt nguội (cold cuts bánh mì): A classic mix of Vietnamese cold cuts, pate, pickled vegetables, fresh herbs, and a touch of chili sauce for an amazing blend of flavors.
- Bánh mì thịt nướng (grilled meat bánh mì): A must-try for meat lovers! Smoky, chargrilled meat slices are perfectly paired with crunchy veggies and chili.
- Bánh mì phá lấu (organ meat bánh mì): A Saigon specialty featuring stewed organ meats for a rich and exotic taste.
- Bánh mì chay (vegetarian bánh mì): A rising star with grilled tofu, mushrooms, and soy-based sauces.
- Bánh mì chả (Vietnamese sausage bánh mì): A Northern-style bánh mì that skips the usual pate, butter, and pickles, yet remains truly special. Unlike other versions, bánh mì chả features only Vietnamese sausage, fresh cucumber, and onions – allowing the authentic flavor of the sausage to shine through.


A Festive Feast
Apart from showcasing the diversity of this iconic dish, the festival also offered educational exhibitions, detailing the journey of bánh mì from its French colonial roots to becoming a symbol of Vietnamese street food known worldwide. Beyond the food, the atmosphere at the festival was vibrant and full of energy. There were even live music performances, interactive workshops on how to assemble the perfect bánh mì, and bánh mì art installations. And of course, endless Vietnamese coffee to complete the typical Vietnamese meal.
